Water kefir 101 – Second fermentation tip

Water kefir 101 – Day 2 of 2nd fermentation at room temperature. Once you have completed the initial fermentation which includes the grains, strain the brew, and at this point you can decanter it into bottles. Pop on an airtight lid and let it stand for a further 2 days+ to build up carbonation. Then […]

quinoa & dill pancake stack with fermented raw almonds

Quinoa & Dill Pancake Stack and fermented raw almonds I don’t like to spend hours in the kitchen to prepare a meal but on weekends (generally Sundays) I make brunch (combining breakfast and lunch to make one spectacular filling meal). I love experimenting, and Sunday brunches are my favorite time to play in the kitchen. As […]

Milk kefir cottage cheese & egg white omelette

This milk kefir cottage cheese & egg white omelette is a great way to start the day. I use ‘single day’ fermented kefir milk which I then strain through a cheesecloth to remove excess whey which leaves you with kefir cottage cheese. I let it strain while refrigerated otherwise it will continue to ferment.  (Only […]

Water Kefir… even your pets will love it.

Another batch of delicious water kefir ready to ferment for 2 days before it us decantered and goes through second fermentation where I add dried or fresh fruit or spices to impart additional flavours. Kefir water is a lighter probiotic per volume of liquid compared to milk kefir which is why you can consume considerably more […]

Green layer consists of kale, sweet potato leaves, spirulina powder, cucumber, celery and coconut water topped with an organic vanilla yogurt & milk kefir blend and […]

Kefir cream cheese

Super easy to make. Just do a double fermentation then strain through a muslin cloth or coffee filter (stand in fridge while it stains the whey as it may take a day or so. You can stir it) Once you are happy with the consistency, add a little Himalayan or Celtic salt, you can also […]

How big is your water kefir??

Well, that depends. Cooler weather seems to encourage the culture to cling together and grow much larger grain structures. In warmer weather the grains like their personal space and grains will be much smaller and they will grow more slowly. Optimum fermenting temperature is between 18 – 26 degrees Celsius (water temperature)

Healthify and luxurify commercial cake mix

Healthify and luxurify a commercially available cake mix (gf)… I made this yesterday for a saturday afternoon treat. The original recipe from the manufacturer called for ‘125ml of oil’. I have found that you can substitute the fat component of most bought  cake mix recipes with delicious probiotic milk kefir. So, here is my version: […]
