After much water kefir reading, I found KefirCulture and purchased a Starter Pack of grains and Fermentation Starter/Booster Sugars+ Formula. So much info on the web! I was nervous about getting it wrong, but it's easy as pie, esp. with the instructional videos and pdf detailed instructions provided. The live grains arrived fast and in very secure packaging.

What a hoot I've been having ever since!! The grains grow quickly - both in size and number, sometimes by 25% in weight from one brew to the next.

Only 3 weeks now since I began. I love the 1st fermentation but save some for a 2nd with fresh mulberries and Atherton raspberries (taking advantage of the current season) - makes a lovely deep red brew. Depending on whether I do the 2nd on the benchtop or in the fridge, the taste changes. One lot stayed out for several days and tasted like a combo of fruity, very dry ginger ale and weak beer - sounds odd but it's seriously refreshing! Feeling much more adventurous now, will try different flavourings, also some longer ferments with maple syrup. Just starting to have enough grains to brew multiple lots simultaneously.

I have an incurable degenerative neurological illness. Since drinking kefir (starting with only a little daily & easing the amount up gradually), one chronic digestive symptom has completely reversed. Even more exciting, my energy levels are going through the roof!! Less important, though still worth mentioning - my nails have noticeably strengthened. Nothing else in my life has altered, thus I can't imagine what could be causing this other than my new kefir habit.
